Honeycomb Popcorn

SERVES 6-8 AS a main course

INGREDIENTS

STEP 1:

  • 300g STORE BOUGHT CARAMEL POPCORN

 

STEP 2:

  • 2 cups WHITE SUGAR
  • 2/3 cup LYLES GOLDEN SYRUP
  • ½ cup WATER

 

STEP 3:

  • 1tbsp BICARBONATE OF SODA

INSTRUCTIONS

STEP 1:

Prepare a large oven dish of approx. 30x40cm with non-stick baking paper and spread the Caramel Popcorn on the base.

STEP 2:

In a medium pot on the heat, place the: Sugar, Golden Syrup and Water and stir to combine. Bring to the boil and insert a Candy Thermometer. Cook for approx. 10-12 minutes until it reaches 152˚C.

 


STEP 3:

Remove from the heat and, working very quickly, add 1 Tablespoon of Bicarb of Soda, stirring it through and immediately pouring it over the  popcorn.

 

STEP 4:

Set aside for at least 30 minutes for honeycomb to cool & harden. To serve, break into shards and enjoy or package for gifts.
