Tamatiestraat Granola with honey figs

SERVES 6-8 AS a main course

INGREDIENTS

  • GRANOLA
    • 200G WHOLE ALMONDS
    • 100G FLAKED ALMOND
    • 200G PECAN NUTS
    • 130G PUMPKIN SEEDS
    • 700G ROLLED OATS
    • 250G COCONUT SHAVINGS
    • 250G BUTTER
    • 200ML HONEY
    • 2t VANILLA EXTRACT
    • 1t CINNAMON POWDER
  • 14 PURPLE FIGS
  • HONEY FOR DRIZZLING
  • 500G GREEK YOGHURT FOR SERVING

INSTRUCTIONS

Make ahead of time: Granola

Preheat the oven to 180˚C

Melt the butter in a pot with the Honey, Vanilla and Cinnamon

When butter mixture is combined, pour over nut/oat/coconut mixture and stir with wooden spoon until well coated

Pour onto an oven sheet (you will need 2 big sheets for this quantity) and bake in the oven for 30 minutes, checking and stirring every 10 minutes

Let it cool completely and then store in an airtight container. 

Making the breakfast /dessert

Preheat the oven to 200˚C

Cut a cross on top of each fig

Line an oven sheet with baking paper and pack figs 2cm apart

Drizzle with honey and bake for 5-10 minutes (depending how “jammy” you like your fig)

Prepare bowls with dollop of Greek Yoghurt and Granola (and extra Honey if you like!)
