17 Feb Tamatiestraat Granola with honey figs Posted at 13:18h in Breakfast & Brunch, Recipes by Reinee SERVES 6-8 AS a main course INGREDIENTS GRANOLA 200G WHOLE ALMONDS 100G FLAKED ALMOND 200G PECAN NUTS 130G PUMPKIN SEEDS 700G ROLLED OATS 250G COCONUT SHAVINGS 250G BUTTER 200ML HONEY 2t VANILLA EXTRACT 1t CINNAMON POWDER 14 PURPLE FIGS HONEY FOR DRIZZLING 500G GREEK YOGHURT FOR SERVING INSTRUCTIONS Make ahead of time: GranolaPreheat the oven to 180˚CMelt the butter in a pot with the Honey, Vanilla and CinnamonWhen butter mixture is combined, pour over nut/oat/coconut mixture and stir with wooden spoon until well coatedPour onto an oven sheet (you will need 2 big sheets for this quantity) and bake in the oven for 30 minutes, checking and stirring every 10 minutesLet it cool completely and then store in an airtight container. Making the breakfast /dessertPreheat the oven to 200˚CCut a cross on top of each figLine an oven sheet with baking paper and pack figs 2cm apartDrizzle with honey and bake for 5-10 minutes (depending how “jammy” you like your fig)Prepare bowls with dollop of Greek Yoghurt and Granola (and extra Honey if you like!)
